Setting out to prove that caviar is not just for the rich and famous, Seattle Caviar Company invites everyone to stop by and discover what the fascination and love of caviar is all about.
Caviar has a elaborate history, yet demands only a very simple presentation, both of which you’ll learn about when you stop by the store. The staff is knowledgeable, answer questions without pretentiousness or condescension, and make the experience fun. The staff is also great if you need help or suggestions for a gourmet gift purchase. Seattle Caviar Company is the only caviar house in the Pacific Northwest.
Here are a few caviar tips:
- Caviar has a relatively short life span. Kept in the refrigerator, unopened, until serving it should last up to about a week and a half.
- It is traditionally served in its container, nestled in ice.
- Serve caviar simply. Some toast, a small wedge of potato, with a little lemon or creme fraiche. That’s all you need. The caviar should stand on its own, not be hidden by the flavors of an accompaniment.
- Caviar should be served with a mother-of-pearl spoon because sterling silver gives off a metallic taste. The caviar can also discolor silver.
- Simple beverages go best with caviar. Iced vodka, champagne or black tea are classic pairings.
Caviars available include those from Iran (Beluga, Osetra, and Sevruga) as well as Domestic choices (White Sturgeon, Montana Golden Whitefish, Yellowstone River Paddlefish, and Chum Salmon). Tastings are available for a small fee.

Seattle Caviar Company offers caviar for sale commercially to restaurants and hotels, as well as to consumers. Stop by the store, or purchase online. (I recommend stopping by the store until you are certain of your palate and preferences.) They also stock fresh foie gras (flown in twice weekly), seasonal black and white truffles, specialty oils (from Italy, France, and Morocco), and specialty salts.
