      研究人员分别给几组仓鼠喂葡萄、葡萄汁、苹果、苹果汁或水,同时还喂它们能导致动脉硬化的高脂肪、高胆固醇饲料。另外一组仓鼠则吃正常饲料作为参照。

      实验结果显示,与喝清水的仓鼠相比,被喂以水果或果汁的仓鼠胆固醇水平较低,主动脉中堆积的脂肪也较少。紫葡萄汁的效果最好,其次是紫葡萄、苹果汁和苹果。

      研究人员还测定了水果和果汁中苯酚的含量。苹果和葡萄中的苯酚含量大致相当,但紫葡萄汁中的苯酚含量比苹果汁高2.5倍。

      这一发现表明,食物中的苯酚含量与这种食物的抗氧化效果有直接关系。水果中的维生素C和胡萝卜素等其他抗氧化成分也有同样效果。

    In the University of Montpellier in France, researchers discovered that grapes, apples and their juices can help prevent atherosclerosis.  And juices are even more efficacious than fruits in fighting the disease.   

     The Reuters news agency reported that these research results first-ever showed fruit nutrients would be seriously affected by food processing.

    Researchers separately fed several groups of hamsters on several different things: grapes, grape juices, apples, apple juices or water.  At the same time, they also fed them on high-fat, high-cholesterol food which might cause atherosclerosis.  Another group were fed only on normal food and the results would be compared with others.

    Researchers also measured the phenol content of fruits and juices.  The phenol content of apples was approximately the same as that of grapes, but the phenol content of purple grape juices was 250% higher than that of apple juices.

    These discoveries showed that the phenol content of food was directly related to the antioxidation effect of that food.  Other antioxidant substances in fruits such as vitamin C and carotene also had the same effect.
