The key poin of making sushi is the sushi rice. We should use good rice whose shape is round. The rice needn’t boiled too ripe and proportion of vinegar and rice is about one to six.

Now let’s begin to make sushi. First we should make the boiled rice loose and soft, and then sprinkle the sushi vinegar in the rice and mix them well. Don’t press the rice and keep the rice intact and soft.

Second we put a piece of laver on the sushi mat, and spread out the rice from left to right on the laver just like the picture.
